Rainbow Candy Salad - Your Kids Will Love It

You will need a food processor for this recipe.

Pair with broiled chicken breasts or fish fillets over brown rice and make it a meal.

I made this salad for a dinner party over the weekend and noticed one little boy go to town on it. So, I've posted this as a recommendation for the kids. Please comment below, I want to hear if your family loves this salad.

Ingredients:

1/4 of a medium sized head of cabbage (purple or green)

2 medium carrots

2 tart apples (pink lady or granny smith are the best)

2 medium red beets

Juice of 1/2 a lemon

Choose either 2 tbsp chopped fresh mint or dill leaves

Optional: Raw hulled pumpkin seeds & greens for garnish

Directions:

1. Wash all fruits and vegetables, cut off ends, and remove wilted portions, but don't bother to skin them. The skins are saturated with nutrients.

2. Slice the cabbage in the food processor with the slice blade

3. Grate the carrots, apples, and beets, in the food processor with the grating blade

4. Put all grated ingredients in a medium sized salad bowl, add the fresh chopped herbs and lemon juice, mix thoroughly

5. If you choose, garnish with raw hulled pumpkin seeds and mint or dill leaves.

Cabbage

Cheap and nutritious this overlooked vegetable is available year round. Containing a large amount of sulphur compounds, cabbage will increase the liver's ability to neutralize and detoxify toxic substances. Cabbage is going to help balance your hormones ladies, so eat up! If you have any digestive issues, eating cabbage can help to soothe the stomach and reduce inflammation. (1)

Carrots

Everyone knows that carrots are good for your eyes. But did you know they will also help to boost your immune system, support your cardiovascular system, and maintain healthy lungs? This simple ingredient is packed full of good for you sweetness and like the cabbage they are cheap! (2)

Beets

Don't be frightened, this root vegetable is delicious and sweet. If you bake them kids (and husbands) will love them because they taste just like candy. They will add colour and variety to any plate and once again beets don't cost very much. They contain a unique phytonutrients called betalains (it's what gives them their bright red & yellow colours). This nutrient provides powerful anti-oxidant protection keeping your immune system and livers strong. (3)

Apples

You must be noticing a theme here, and yes apples are cheap. This salad is a very cost effective way to feed your family whole foods. Apples will help to balance blood sugar levels due to their high fibre content. The fibre in apples will also help to lower bad cholesterol levels, keeping your heart healthy and strong. Have bowel movement irregularities? The fibre in apples will help keep things regular. They are also high in anti-oxidants that boost immune system and liver function. (4)
